Our Un-Thanksgiving
Yesterday we were pretty bummed that everyone back home was having turkey, and we weren't. There is no way that we can fit a turkey in our oven, so we bought the next best thing. A chicken. And it was pre-stuffed! I am pretty sure that this is the first whole chicken I have EVER cooked of my own free will. Most of you know that I don't really like meat, and I especially don't like it when the thing I am eating looks like what it was before it ended up on plate. I much prefer the boneless, skinless variety of chicken. Much less guilt and thinking what its function was before it was food for me.
We were planning on making this same kind of chicken for Christmas, but I don't think that it would feed two men, and me. (our friend, Justin, is coming over for Christmas.) Any suggestions for possible alternatives?? Look at how small the wishbone is!!

Why don't you consider something like a beef wellington, even if you don't eat it. Or a roast?
Or, better yet, how about a ham? :)
Or, another alternative would be a variety of appetizers.
I'll come up with some ideas for you and send you an email with links to the recipes. I'm assuming they have most everything over there as well, at least as far as ingredients go.
Good for you! I have still not cooked a whole chicken, or a turkey, or a ham either, even after almost 14 years of marriage....

Aunt Sue is going to have a hissy fit about not stuffing the bird and especially don't stuff it unless you do it immediately before you cook it as it is against all that the kitchen gods hold holy!! But it looks awesome and you did a great job, possible the prettiest cooked bird I ever saw.!

Trish, I couldn't have done better myself! It looks wonderful. I don't know if they have this there, but if they do I would go and get 3 pheasants... They are small and easy to cook but are much more tender and tasty than chicken. Love ya
Trisha, I am here to tell you I am not going to have a hissy fit!!! You did a beautiful job on the "bird". My suggestion was to go with a Ham (very traditional for the Christmas Dinner).I am so sorry I did not get to chat with you on Sunday. I was busy mashing the potatoes and making the gravy. I hope I will get a chance to chat with both of you very soon. We miss the two of you, the holidays sure seem strange without you guys. I am so proud of you with your stand on George W. He certainly can be a "putz". aunt sue
